we like to keep things as natural + organic as possible in our home. one of the very first organic brands we found in our tiny grocery store was horizon. and thank goodness for them, as they carry so many different products to fit our family’s needs. horizon takes pride in keeping all of the weird stuff out of our food; this means no artificial colors, flavors, preservatives and no GMOs and of course, always organic.
on days where i am chasing two very wild little boys around, while trying to tend to oliver’s every need, while completely a mile long to do list, i am so happy that i can just grab a box from the pantry and whip the boys’ up a fast + easy lunch. and i am even happier that horizon offers us the yummy boxed mac+cheese we love, without all of the yucky added stuff. these lunchin’ days are always the boys’ favorite. i mean, hellooo boxed mac+cheese?! it’s what childhood is known for! some days, we be fancy. and this day was one of them! whenever i can throw some extra veggies at the boys without them even realizing, i am so doing it!
also, apparently i am not a chef, because this recipe does not even have a name, and i don’t think it ever will [ha!]. but by golly you need to make it. so here it is:
mac+cheese with spinach + onion
- 1 box horizon Mac+cheese
- 4 tablespoons of butter
- 1/4 cup horizon whole milk
- 2-3 giant handfuls of organic baby spinach
- 1/2 red onion sliced
- make your Mac+cheese, per directions on back of box
- melt 2 tablespoons of butter in pan. sauté onions until tender.
- throw in handfuls of baby spinach. sauté for several minutes on low.
- mix veggie goodness into Mac+cheese
- for something extra special, add some buffalo sauce + chicken
